in theory how does one blight someone's crops (i may or may not be in the farming world championship and not actually know how to farm)

Depending on the crop, there are bacteria that causes blight in them. Mold and certain fungi can be introduced to crops, but it will take a while for widespread blight to occur. Know your opponents crops before you act on it.
