I decided last Friday that I absolutely love roasted fennel. It’s absolutely delicious. I love pretty much all vegetables except for maybe the big purple egg plant. It’s terribly spongy. I also don’t love bell peppers but am willing to eat them even though they give me terrible heartburn.
